		<description>I agree with you entirely Steve. The wine would need more time to show at its best, however when you&#039;re poured a glass of new(ish) release Grand Cru, one has to &quot;make do&quot; (sorry, can&#039;t think of a better term!) with the situation at hand and take it on its merits. 

Anyhow, only time will tell how the &#039;05s will fare in future but even in discussions with other friends including a couple of diehard Burgundy drinkers, some aren&#039;t too sure whether &#039;05 really will be as good as everyone reckons.

Probably a little pricey at $200 a head but the salmon dish was one of the best pink fish dishes I&#039;ve had and comparable to both Neal Jackson&#039;s salmon confit and Tetsuya&#039;s Ocean Trout confit.</description>
